- Bell peppers- Use any color you like!
- Onion - I used a red onion for color, but you could also use yellow, shallot, or pearl.

Step 1: Cut 1 pound of chicken thighs or breasts into 1-inch pieces. Dice 2 bell peppers and 1 onion into 1-inch cubes.
Step 2: Place the chicken, bell peppers, and onion in a mixing bowl. Pour 1 cup of sweet Italian dressing over the chicken and vegetables.
Step 3: Thread the marinated chicken, bell peppers, and onion onto skewers, alternating pieces.
Step 4: Preheat a grill to medium-high heat and grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and vegetables are tender and lightly charred.

- 1 lb chicken thighs or breasts cut into 1-inch pieces
- 1 cup sweet Italian dressing homemade or store-bought
- 2 bell peppers any color, cut into 1-inch pieces
- 1 onion cut into 1-inch pieces
- salt & pepper to taste
Instructions
- Marinate the Chicken, Bell Peppers, and Onion: In a bowl, combine the chicken pieces, bell peppers, and onion. Pour 1 cup of sweet Italian dressing over them, making sure everything is well coated. Cover and refrigerate for at least 30 minutes to marinate.
- Preheat the Grill: Preheat your grill to medium-high heat, about 400ยฐF (200ยฐC).
- Assemble the Skewers: Thread the marinated chicken pieces, bell pepper pieces, and onion pieces onto skewers, alternating between them until the skewer is filled, leaving a little space at each end.
- Grill the Skewers: Place the assembled skewers on the preheated grill. Season with salt and pepper. Grill for about 10-12 minutes, turning occasionally, until the chicken is fully cooked through and the vegetables are tender and lightly charred.
- Serve: Once grilled, remove the skewers from the grill and let them rest for a few minutes. Serve hot as a main dish with your favorite sides like rice, salad, or grilled vegetables.
