Ingredients

  • 1 lb chicken thighs or breasts cut into 1-inch pieces
  • 1 cup sweet Italian dressing homemade or store-bought
  • 2 bell peppers any color, cut into 1-inch pieces
  • 1 onion cut into 1-inch pieces
  • salt & pepper to taste

Instructions

  • Marinate the Chicken, Bell Peppers, and Onion: In a bowl, combine the chicken pieces, bell peppers, and onion. Pour 1 cup of sweet Italian dressing over them, making sure everything is well coated. Cover and refrigerate for at least 30 minutes to marinate.
  • Preheat the Grill: Preheat your grill to medium-high heat, about 400°F (200°C).
  • Assemble the Skewers: Thread the marinated chicken pieces, bell pepper pieces, and onion pieces onto skewers, alternating between them until the skewer is filled, leaving a little space at each end.
  • Grill the Skewers: Place the assembled skewers on the preheated grill. Season with salt and pepper. Grill for about 10-12 minutes, turning occasionally, until the chicken is fully cooked through and the vegetables are tender and lightly charred.
  • Serve: Once grilled, remove the skewers from the grill and let them rest for a few minutes. Serve hot as a main dish with your favorite sides like rice, salad, or grilled vegetables.
