Ingredients
- 12 large eggs
- ½ cup whole milk
- 6 ounces cheese
- Nonstick spray
- Salt and pepper
- Avocado
- English Muffins
- Bacon optional
Instructions
- Preheat Oven: Preheat the oven to 375 °F (190 °C).
- Prepare Eggs: Whisk together the eggs and milk until smooth.
- Prepare Sheet Pan: Lightly spray the sheet pan with nonstick spray or lightly butter it.
- Bake Eggs: Pour the egg mixture into the prepared sheet pan. Bake for 12 minutes at 375 °F. The eggs should be almost completely cooked through; it's okay if there's still a little liquid.
- Add Cheese: Remove the sheet pan from the oven and add cheese on top of the eggs. Return the pan to the oven for 3 more minutes to melt the cheese and finish cooking the eggs.
- Season Eggs: Once cooked, season the eggs with salt and pepper according to taste.
- Cool and Wrap: Allow the eggs to cool completely. Once cooled, cut them into 12 even squares and wrap each square in plastic. Freeze the squares. For longer storage, wrap the eggs in foil.
- Reheat Eggs: To reheat the eggs, remove them from the plastic wrap and microwave on high for about a minute.
- Assemble Sandwiches: Toast the English muffins. Place a square of the reheated egg on the muffin, add slices of avocado, and optionally, cooked crispy bacon.
Notes
- Use a Properly Sized Sheet Pan: Ensure your sheet pan is large enough to spread the egg mixture evenly without overcrowding, allowing for even cooking and easy removal of the eggs later.
- Experiment with Cheese Varieties: While the recipe suggests using cheese, feel free to experiment with different types such as cheddar, mozzarella, or pepper jack to add varying flavors to your breakfast sandwiches.
- Customize with Additional Ingredients: While avocado and bacon are suggested accompaniments, consider adding other ingredients like sautéed vegetables or different types of meats to customize your breakfast sandwiches according to your preferences and dietary restrictions.
