Sheet Pan Dinner with Slow Roasted Salmon & Creamy Dill Sauce
While I have plenty of meals on MeghanItUp that will be great your Valentine's Day dinners...I also wanted include a recipe for those who don't celebrate this holiday. This is an easy one sheet pan dinner with slow roasted salmon, crispy home fries, and umami tomatoes. It's all topped with a creamy dill sauce that really brings the whole meal together. It's yummy and good for you, because YOU deserve it! Serve with a nice glass of wine, because wine not?! Happy Valentines Day or Sunday...either way, have a wonderful day!

Ingredients
- 10 oz Salmon Fillet
- โ Cup Whole Grain Mustard
- 2 teaspoon Fennel Seeds
- 2 teaspoon Coriander Seeds
- 2 teaspoon Salt divided
- 1 Cup Cherry Tomatoes
- 2 Medium Yukon Potatoes
- 1 tablespoon Olive Oil
- ยฝ Cup Greek Yogurt or Sour Cream
- 1 tablespoon Fresh Dill chopped, extra for garnish
Instructions
- Preheat oven to 350ยฐF. Add Fennel Seeds and Coriander Seeds to a baking sheet and toast for 5 minutes. Once toasted, remove from sheet pan, and using a spice grinder or pestle & mortar, grind the spices into a powder. Set to the side.ย
- Change oven temperature to 300ยฐF.
- Cut Salmon into 1" x 1" pieces and place into a resealable bag. Add Mustard and Spices to bag and coat the Salmon well. Place Salmon on to a prepared baking sheet and sprinkle with ยฝ teaspoon Salt.ย
- Cut Potatoes into ยฝ" cubes and boil until fork tender or microwave for 5 minutes. This will cook the inside of the potatoes and is called "par-cooking."ย
- Add the par-cooked Potatoes and Tomatoes to a small bowl and toss with Olive Oil and 1 teaspoon Salt. Place Tomatoes and Potatoes on to the baking sheet with Salmon.ย
- Place the sheet pan in the oven and bake for 60 minutes.ย
- Meanwhile, make the sauce. In a small bowl combine Greek Yogurt, Dill, and ยฝ Salt. Refrigerate until ready to use.ย
- Serve the Salmon, Tomatoes, and Potatoes drizzled with the Sauce and garnish with extra Fresh Dill.ย
