20 Minute Baked Salmon Skillet with Creamy Roasted Red Pepper Sauce
Are you looking for an easy, delicious weekday dinner that the whole family will love? If so, then I really think this one will check the box! I made the sauce by blending roasted red peppers, roasted almonds, a tomato, red wine vinegar, garlic, and spices together before bringing the blended mixture to a simmer and adding the cream (you could use coconut milk or a milk alternative as well.) The sauce is so creamy and dreamy! The salmon is lightly pan fried before finishing in the oven and baking in the sauce. I added pasta to mine to complete the dinner! I hope you give this one a try!

Ingredients
- Roasted Red Pepper Sauce
- ยฝ Cup Roasted Red Peppers jarred preferred
- ยผ Cup Smoked Almonds almonds and/or cashews
- 1 Plum Tomato chopped
- 2 tablespoon Red Wine Vinegar
- 1 Garlic Clove
- ยผ teaspoon Paprika
- ยผ teaspoon Crushed Red Pepper
- โ Cup Cream you can use any milk alternative as well
- ยฝ teaspoon Salt
- ยฝ teaspoon Pepper
- Salmon
- 3 Fillets of Salmon skin removed
- 1 tablespoon Avocado Oil or any oil with a high smoke point
- Serving & Garnish
- ยฝ Lemon cut into slices
- 1 tablespoon Fresh Oregano
- Sea Salt
- Black Pepper
- 8 Oz Cooked Pasta
Instructions
- Roasted Red Pepper Sauce
- In a blender, blend all sauce ingredients except for Cream.ย
- Add the blended sauce to small saucepan over low heat and stir in the Cream. Stir on low heat until warm, smooth, and combined, about 4 minutes. Set aside.
- Baked Salmon
- Preheat oven to 400ยฐF.ย
- Heat Oil in oven safe pan (such as a cast iron skillet) over medium-high heat.
- Add Salmon and sear one side in the hot oil for 2 minutes, then flip Salmon over and sear other side for 2 minutes.ย
- Add prepared Roasted Redย Pepper Sauce to the pan with the Salmon. Heat for 2 minutes, then transfer pan to oven.
- Bake at 400ยฐF for 10 minutes, or until Salmon is no longer pink.ย
- Serve over cooked Pasta and garnish with Lemon and Oregano. Season with Salt and Pepper, to taste.
