One of the things that I’m absolutely obsessed with this summer is making next level gourmet burgers. By next level I mean upping the ante and really making some delicious awesome flavors from simple ingredients. For this recipe I was looking for the ultimate sweet and savory combo and I was able to find it in the delicious grilled onions, meaty elk burgers, creamy brie, and the sweet fig jam.

This is actually a fairly quick recipe to make once the onions are done caramelizing, however that is one procedure you don’t want to skip or barely do. There is nothing more delicious than sweet caramelized onions…especially once combined with the fig jam. Also check out my Baked Brie with Cranberry & Pecan.

WHY YOU'LL WANT TO TRY ELK

All Natural Elk ⅓ LB Burgers from Frontière Natural Meats have a signature taste and experience you can only get from cooking on the grill. Providing unbeatable lean protein, there’s a reason elk is called the heart smart red meat.

Nutrient dense and leaner than beef, All Natural Elk meat offers superior levels of protein and important vitamins and minerals such as niacin, zinc and selenium. As always, animal welfare is a hallmark of Frontière Natural Meats, and they take pride ensuring the elk are raised in a sustainable environment.

Made from the highest quality ingredients, the All Natural Elk Burgers are never given growth hormones or mass-administered antibiotics, and never fed animal byproducts. You’ll be delighted by the wholesome flavor in every package.

    SUSTAINABILITY

As soon as the patties are formed, they are stacked with paper dividers, vacuum sealed in durable packages and frozen for your order. When they pack everything, each box is built to safeguard quality without leaving a heavy carbon footprint. Recyclable cardboard dividers and butcher paper insure none of your packages get damaged. Biodegradable insulation and dry ice keeps everything frozen in route to your front door step. Even the plastic wrap that contains the insulation and the dry ice can be recycled (look for your local plastic film drop-off locations).  This is straight-from-the-butcher quality you can taste!

    WHAT YOU'LL NEED

Burgers - Use your favorite frozen burgers, I used elk burgers - get the ones I used here. Visit frontierenaturalmeats.com and use code MEGHAN10 to get 10% off your order!

Buns - I typically opt for a soft brioche bun for my burgers, but this time I used ciabatta rolls and they were pretty darn delicious!

Brie - I used light brie, but that's because my husband doesn't like cheese and didn't pay attention to what he was buying. But hey! It all worked out!

Fig Jam - So many options at the store for fig jam. If you have a homemade version, let me know in the comments and I'll be happy to share!

Mixed Greens - Ok, I have a secret. I don't like arugula, so I always opt for mixed greens and they are the perfect bite of pepperiness that marries the the other flavors in the burger.

Onion - I like smaller onions when I calamezlie them. I cut off the top, remove the skin then cut into whole slice.

Salt & Pepper - The simplest and best seasoning for burgers (In my opinion!)

    INGREDIENT NOTES & SUBSTITUTES

Burgers - Use any frozen burger you want! I used elk burgers but beef, bison, turkey, chicken, vegan, portobello mushroom cap....would all be so so good! Visit frontierenaturalmeats.com and use code MEGHAN10 to get 10% off your order!

Buns - For this specific burger, I really like ciabatta rolls, but brioche buns are also a great option.

Brie - Camembert Cheese another French-style soft white cheese similar to brie in its flavor and texture. You could also use a mild goat cheese.

Fig Jam - You could also use apricot jam, prune jam, date jam, or even honey!

Mixed Greens - You could also use spinach or arugula. I'd steer away from using iceberg or romaine on this burger, but if it is all you have - it'll do just fine!

Onion - I like to use yellow onions but this would be equally as good with red onions or even shallots!

Salt & Pepper - Although I like simple seasoning, you could also add garlic powder, onion powder and your other favorite go to seasonings!

HOT TO MAKE THESE AMAZING BURGERS

Preheat your grill to medium high heat and season your burgers with salt and pepper.

Grill onion over direct heat, flipping occasionally until onions have become slightly translucent and taken on dark grill marks, remove from the heat. (For a stovetop method, melt 1 tablespoon butter in a pan, add onions and 1 teaspoon salt. Let cook over medium heat, stirring often for 20 minutes.)

Grill the burgers 4-5 minutes, flip. Sear burgers 3-4 more minutes or until the internal temperature reaches 160°F.

    TIPS & TRICKS

I made these for a friends BBQ and traveled across town with them. The trick? I pre-made the caramelized onions and put them in a ceramic, resalable container. I pre-sliced my brie and added the brie and greens in a ceramic, resealable container. I brought the jam in the jar, the buns in the bag, and the frozen elk burgers in their original packaging.

I recommend cooking your burgers from frozen, they will hold better.

If you make your caramelized onions on the stove, add 1 tablespoon butter to a pan, once melted, add the sliced onions and one teaspoon of salt. Cook for about 20 minutes, stirring often, until soft and sweet!

    HOW TO SERVE IT

Build your burgers with fig spread on the bottom of the bun. I don't measure, I just add a big spoonful then spread it on thick.

Add your burger, followed by slices of brie - add as much as your heart desires!

Top the brie with your greens and caramelized onions. Add the top bun and enjoy!

I recommend taking a big bite and getting a little bit of everything in that first bite! It's an incredible bite of food!

    HOW TO TWEAK IT

    • Add the brie while the burgers are still not he grill for an extra cheesy, melty flavor and texture
    • Add fig jam on both the top and bottom of the buns (yum!)
    • Add a little butter to the buns and toast them on the grill
    • Toss your greens with a little olive oil and balsamic for an extra kick of flavor
