๐ญ Recipe FAQs
Yes, while Spaghetti quadrato or Chitarra is traditional, you can use any long pasta such as regular spaghetti, linguine, or fettuccine.
To reduce the heat, use fewer red pepper flakes or omit them entirely. You can also remove the seeds from the chili peppers if you choose to use them instead.
While it's best enjoyed fresh, you can prepare the breadcrumbs and chop the garlic and parsley in advance. Cook the pasta and assemble the dish just before serving for the best texture and flavor. If needed, you can store leftovers in the refrigerator and reheat them gently on the stove with a splash of olive oil or reserved pasta water.
๐ฅฃ Storage & Reheating
Storage: Leftover Spaghetti alla Carrettiera can be stored in an airtight container in the refrigerator for up to 3-4 days.
Reheating: To reheat, place the desired portion in a microwave-safe dish and microwave on high in 30-second intervals, stirring in between, until heated through.
Freezing: Spaghetti alla Carrettiera can be frozen for longer storage. Allow it to cool completely before transferring it to a freezer-safe container or resealable plastic bag. Make sure to remove as much air as possible from the container or bag to prevent freezer burn. It can be frozen for up to 2-3 months. When ready to use, thaw overnight in the refrigerator before reheating following the instructions above.
๐ท Wine Pairing
A crisp and refreshing Pinot Grigio pairs wonderfully with Spaghetti alla Carrettiera, complementing the garlic, red pepper flakes, and fresh parsley with its light, zesty flavors and bright acidity.
๐ฉ๐ผโ๐ณ Top Tips
- Toast Breadcrumbs Perfectly: Stir frequently and watch closely to achieve a golden brown crunch without burning.
- Cook Garlic Just Right: Sautรฉ until fragrant and slightly golden to avoid bitterness.
- Reserve Pasta Water: Use it to emulsify the sauce for a silky, well-coated pasta.
