Herby Goat Cheese & Fig Jam Cicchetti
I really miss international travel and I've spent a lot of my free time reminiscing about our past trips to Italy. While looking at one of my photo books I was inspired to make a Venetian dish that we have had both times we've been to Venice! Cicchetti is like bruschetta or crostini, except the bread is soft and thicker. I chose to top mine with herby goat cheese and a homemade fig jam. Feel free to add some prosciutto for a bit of saltiness! Enjoy!

Ingredients
- 1 lb Figs stems removed, quartered
- ¼ Cup Sugar
- 1 teaspoon Vanilla Extract
- 1 Lemon juiced, divided
- 4 oz Goat Cheese
- 1 tablespoon Olive Oil
- 1 tablespoon Fresh Thyme
- ¼ teaspoon Salt
- Fresh Italian Bread
- 3 tablespoon Honey
- 1 tablespoon Balsamic Vinegar
- 1 tablespoon Pecans chopped
Instructions
- In a small saucepan, add Figs, Sugar, Vanilla, and ½ of the Lemon juice. Bring to a boil and mash with a fork until Figs are broken up. Remove from the heat when the texture is thick and jelly like, about 10 minutes. Set aside and cool completely.
- In a small bowl, mix Goat Cheese, Olive Oil, Salt, ½ of the Lemon juice and Thyme. Set to side.
- Cut bread in about 1" pieces.
- In a separate small bowl, mix Honey and Balsamic. Set aside.
- To assemble, add Goat Cheese mixture on top of the bread. Top with cooled fig jam. Drizzle with Honey Balsamic and top with chopped Pecans! Enjoy!
