Grilled Chicken Skewers with Garlic Sauce and Crispy Butter Potatoes
ALL.THE.FLAVORS....seriously this recipe is sooooooooo good! Let's start with the garlic sauce...so easy, full of flavor and you're going to want to put it on everything. The chicken is marinated in the garlic sauce and tomato paste for an extra kick before being grilled and charred to moist flavorful perfection. Then the potatoes....woah. Baked until crispy and topped with melted butter that makes these potatoes melt in your mouth. This recipe is up there on my favorites list and I hope it'll be a favorite for you too!

Ingredients
- Garlic Sauce
- 6 Garlic Cloves peeled
- 2 Large Egg Whites
- 2 tablespoon Fresh Lemon Juice
- 1ยฝ Cups Vegetable Oil
- Salt
- Grilled Chicken Skewers
- ยผ Cup Garlic Sauce
- 3 tablespoon Fresh Lemon Juice
- 2 tablespoon Tomato Paste
- 1 tablespoon Ground Coriander
- 3 tablespoon Vegetable Oil plus more for grill
- 1 Lb Chicken Breasts boneless & skinless, ,cut into 1" cubes
- Crispy Butter Potatoes
- 4 Yukon Gold Potatoes cut in ยผ" slices (can leave skin on)
- 3 tablespoon Olive Oil
- ยฝ teaspoon Ground Tumeric
- ยผ teaspoon Ground Cayenne Pepper
- 6 Cloves Garlic peeled and smashed
- Salt
- 2 tablespoon Melted Butter
Instructions
- Garlic Sauce
- Pulse Garlic, Egg Whites, and Lemon Juice in a food processor until smooth. Gradually stream in half of the Oil. Scrape down the sides and continue to process, adding the remaining Oil until the mixture thickens and becomes fluffy. Season with Salt. Reserve ยผ cup for the Chicken marinade and chill the rest for serving.ย
- Grilled Chicken Skewers
- In a large bowl, mix Lemon Juice, Tomato Paste, Coriander, Garlic Sauce, and Olive Oil. Add in cubed Chicken and toss to coat. Add Chicken and marinade to a resealable bag and let marinade for 1-3 hours. Let come to room temperature for 1 hour before grilling.
- Preheat grill to medium high heat and oil the grate. Add the Chicken to skewers and grill for 10-12 minutes. The Chicken will be brown and slightly charred.
- Serve with Crispy Butter Potatoes and with Garlic Sauce on the side.
- Crispy Butter Potatoes
- Preheat oven to 425ยฐF. Place the Potatoes on a large baking sheet and toss with Olive Oil, Turmeric, Cayenne, Garlic, and a pinch of Salt. Spread the Potatoes into a single layer. Transfer to the oven and bake for 20 minutes, then flip and bake for 15 minutes more. Remove from oven, add the Butter, toss, and return to the oven for another 5 minutes. Serve with Grilled Chicken Skewers and Garlic Sauce.ย
