Garlic Sauce
Pulse Garlic, Egg Whites, and Lemon Juice in a food processor until smooth. Gradually stream in half of the Oil. Scrape down the sides and continue to process, adding the remaining Oil until the mixture thickens and becomes fluffy. Season with Salt. Reserve ¼ cup for the Chicken marinade and chill the rest for serving.
Grilled Chicken Skewers
In a large bowl, mix Lemon Juice, Tomato Paste, Coriander, Garlic Sauce, and Olive Oil. Add in cubed Chicken and toss to coat. Add Chicken and marinade to a resealable bag and let marinade for 1-3 hours. Let come to room temperature for 1 hour before grilling.
Preheat grill to medium high heat and oil the grate. Add the Chicken to skewers and grill for 10-12 minutes. The Chicken will be brown and slightly charred.
Serve with Crispy Butter Potatoes and with Garlic Sauce on the side.
Crispy Butter Potatoes
Preheat oven to 425°F. Place the Potatoes on a large baking sheet and toss with Olive Oil, Turmeric, Cayenne, Garlic, and a pinch of Salt. Spread the Potatoes into a single layer. Transfer to the oven and bake for 20 minutes, then flip and bake for 15 minutes more. Remove from oven, add the Butter, toss, and return to the oven for another 5 minutes. Serve with Grilled Chicken Skewers and Garlic Sauce.
