- 4 medium to large green or red bell peppers
- 1 ยฝ pounds lean ground beef
- 1 cup chopped onion
- 1 cup cooked rice
- 2 teaspoons Italian seasoning
- ยฝ teaspoon garlic powder
- ยฝ teaspoon salt
- ยผ teaspoon ground black pepper
- 2 cans 15 ounces each tomato sauce, divided
- ยฝ cup shredded mozzarella cheese
Instructions
- Preheat oven to 400ยฐF (200ยฐC). Prepare bell peppers by cutting off tops, removing seeds and membranes, and rinsing. Adjust bottoms if needed for stability.
- In a skillet over medium-high heat, brown ground beef and onion until beef is cooked and onion is softened. Drain excess fat.
- Stir in cooked rice, Italian seasoning, garlic powder, salt, and pepper until combined.
