Grilled Romaine Salad with Creamy Lemon Caper Dressing
This is the salad of the summer! Yeah, I know it's still spring, but I'm ready for summer and backyard BBQ's! So while you're grilling the meats, throw on some romaine and make this salad that will be enjoyed just as much as the mains. The dressing is tangy and creamy, and the homemade croutons are a real game changer! You'll be making this salad all summer long - guarunteed!ย

Ingredients
- Dressing
- โ Cup Mayonaisse
- 1 Clove Garlic minced
- 1 teaspoon Capers
- Zest and Juice of ยฝ a Lemon
- ยผ teaspoon Salt
- Freshly ground black pepper
- Salad
- 8 Slices Bacon cut into pieces
- 2 Cups Hand Torn Pieces Sourdough Bread
- 2 Heads of Romaine Lettuce halved
- Olive oil for brushing
- Sliced Red Onion
- Parmesan Cheese shaved
Instructions
- Dressing
- In a small jar or bowl, combine Mayo, Garlic, Capers Lemon zest and juice, Salt and Pepper. Whisk well to combine. Cover and refrigerate until ready to serve.
- Salad
- Cook Bacon in a skillet until crispy. Drain on paper towels. Leave Bacon fat in the pan and add torn pieces of Sourdough. Toast the Bread over medium heat until crisp and golden.ย
- Preheat your grill to 500ยฐ.
- Brush Romaine on the cut side with Olive Oil. Once your grill is preheated, place the Romaine cut-side down onto the grill grates. Use tongs to press the lettuce gently onto the grates. Grill for 2 to 3 mintues before turning. Repeat on the second side before transferring to a platter.
- Top grilled Romaine with the dressing, add the Bacon crumbles, Toasted Bread, fresh Red Onions and ย Parmesan Cheese shavings. Top with more dressing and lots of freshly Ground Black Pepper.
