Corned Beef Tacos with Cabbage Slaw & Thousand Island Dressing
Corned Beef Tacos? Yeah, I know, it sounds odd....BUT it's so yummy! A fun way to use leftover corned beef and cabbage is to throw them in these tacos! You can sub out purple cabbage for green cabbage, corn tortillas for flour tortillas, homemade dressing for prepared dressing. That's the beauty of using leftovers and creating something new...just use what you have! I really hope you get to try this combo of leftovers because, who doesn't love tacos?

Ingredients
- Corned Beef If you aren't using leftovers
- 2 lb Corned Beef
- 1 teaspoon Mustard Powder
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Garlic Powder
- ½ teaspoon Pepper
- Slaw
- 1 Cup Purple Cabbage shredded
- 1 Small Onion diced
- 1 Jalapeño diced
- 2 tablespoon Mayonnaise
- 1 tablespoon Apple Cider Vinegar
- 1 teaspoon Spicy Brown Mustard
- Thousand Island Dressing
- 1 Clove Garlic minced
- ¾ Cup Mayonaisse
- ¼ Cup Sriracha
- 1 tablespoon Giardiniera
- 1 Hard-Boiled Egg chopped
- Salt
- Pepper
- Tacos
- ½ Lb Cooked Corned Beef cubed (see notes for instructions how to make corned beef)
- 10-12 Flour Tortillas
- Jalapeño sliced
Instructions
- Slaw
- Add all of the ingredients to a bowl and mix well until nice and creamy.
- Refrigerate until ready to use.
- Thousand Island
- Add the all ingredients to a food processor and blend until sauce-like.
- Refrigerate until ready to use.
- Assembly
- To warmed Tortillas add Slaw, Corned Beef, and Thousand Island. Top with slices of Jalapeño.
Notes
Corned Beef (Oven)
- Add the Corned Beef to a large pot or Dutch oven along with the spice packet contents, Mustard Powder, Cayenne Pepper, Garlic and Seasonings. Add about an inch of water and cover.
- Bake for 2 hours at 350°F, or until the Corned Beef is nice and tender. Uncover and increase the temperature to 400°F and bake another 15 minutes.
- Remove from the pot and cool slightly. Dice the Corned Beef with a fork and set aside.
- Place Corned Beef in Crockpot along with the spice packet contents, Mustard Powder, Cayenne Pepper, Garlic and Seasonings. Add about an inch of water and cover.
- Cook on high for 4-6 hours or low for 8-10 hours.
- Remove Corned Beef from crockpot and cool slightly. Dice the corned beef with a fork and set aside.
