Ingredients

  • 3 cups Chex rice cereal
  • 3 cups pretzels or pretzel sticks
  • 3 cups cheese crackers
  • 2 cups roasted cashews unsalted or lightly salted
  • 6 tablespoons butter
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon kosher sea salt

Instructions

  • Preheat the oven to 300 degrees F (150 degrees C). Line a rimmed baking sheet with parchment paper or a silicone baking mat and set it aside.
  • In an extra-large mixing bowl, combine the Chex rice cereal, pretzels or pretzel sticks, cheese crackers, and roasted cashews.
  • In a small microwave-safe bowl, add the butter. Place it in the microwave and heat for 45 seconds to 1 minute on HIGH until completely melted.
  • Add the olive oil, balsamic vinegar, kosher sea salt, and Mediterranean spices to the melted butter. Whisk until well combined.
  • Pour the butter mixture over the dry ingredients in the mixing bowl. Toss gently to ensure the dry ingredients are evenly coated.
  • Transfer the mixture onto the prepared baking sheet. Spread it out evenly in a single layer.
  • Bake in the preheated oven for 40 minutes, stirring the mixture at the 15 and 30-minute marks to ensure even baking.
  • Once done, remove the baking sheet from the oven and allow the Chex mix to cool completely before serving or storing.
  • Optionally, you can sprinkle an extra amount of Mediterranean spices and drizzle some balsamic vinegar over the Chex mix before serving.
