Biscoff Tiramisu

Biscoff tiramisu is a heavenly dessert made with layers of creamy mascarpone cheese, coffee-soaked Biscoff cookies, and a hint of liqueur.

Ingredients

  • 1 package Lotus Biscoff biscuits 32 pieces, save 2 for the crumbled topping
  • 1 ½ cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 cup mascarpone cheese
  • ½ Teaspoon vanilla extract
  • 2 tablespoons Lotus Biscoff spread melted (microwave in 15 second increments)
  • ¼ Cup Espresso or Instant Coffee
  • Optional 2 Tablespoons Rum

Instructions

  • In a large bowl add whipping cream and powdered sugar. Beat with a hand mixer until soft peaks form. Add soft mascarpone cheese, melted Biscoff spread, and vanilla extract, and mix well until smooth.
  • Dip Biscoff biscuits in room-temperature espresso mixed with rum, if using. 
  • Place the biscuits at the bottom of a glass baking dish. Spread the cheese mixture over the biscuits.
  • Place the baking dish in refrigerator, and chill for 4 hours.
  • Dust with crumbled Biscoff cookies and serve. 

Notes

  • Don't over-soak the cookies: Dip the Biscoff cookies in the coffee mixture just until they're moistened, but not soggy. Over-soaking them can result in a mushy texture.
  •  Chill the dessert before serving: Biscoff tiramisu needs to chill in the refrigerator for at least a few hours (preferably overnight) before serving. This will help the flavors meld together and the dessert to set up properly.
  • Use a deep dish: Because you'll be layering the dessert, it's important to use a deep dish or bowl to give you enough space to add all the layers.
  • Be creative with toppings: Biscoff tiramisu can be topped with a variety of things, such as whipped cream, cocoa powder, caramel sauce, or chopped nuts. Get creative and experiment with different toppings to add some extra flavor and texture to the dessert.
  • Let the dessert come to room temperature before serving: Take the tiramisu out of the refrigerator at least 30 minutes before serving to allow it to come to room temperature. This will help the flavors to come through more clearly and the dessert to be more enjoyable.
  • Use high-quality ingredients: Because this dessert has few ingredients, it's important to use high-quality ones. Choose a good quality mascarpone cheese, good liqueur, and strong coffee for the best flavor.
