Jackfruit Carnitas Tacos with Dragon Fruit Salsa

Prep yourself for meatless Monday and/or taco Tuesday with this super easy and delicious vegan taco dinner! The salsa is fresh and fruity and pairs perfectly with the marinated jackfruit! It’s all served in warm tortillas for the perfect quick and healthy dinner! 

Ingredients

  • Dragon Fruit Salsa
  • ¼ Cup Cilantro finely chopped
  • ½ Cup Dragon Fruit finely diced
  • ½ Cup Pineapple finely diced
  • 1 Jalapeño finely diced (remove seeds for less spice)
  • Juice of 1 Lime
  • ½ teaspoon Salt
  • Marinade
  • 2 tablespoon Tomato Paste
  • 1 teaspoon Cumin
  • 2 teaspoon Garlic Powder
  • 1 teaspoon Oregano
  • 2 tablespoon Brown Sugar
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 2 tablespoon Olive Oil
  • 2 tablespoon Soy Sauce or Coconut Aminos
  • Jackfruit Carnitas
  • 1 tablespoon Olive Oil
  • ½ Yellow Onion diced
  • 2 20 oz Cans Jackfruit in Brine rinsed
  • ½ Cup Water
  • ¼ Cup Orange Juice
  • 1 teaspoon Smoked Salt or Liquid Smoke
  • Assembly
  • Warmed Tortillas

Instructions

  • Dragon Fruit Salsa
  • In a medium bowl, mix all ingredients together. Let chill in the refrigerator until ready to use. 
  • Jackfruit Carnitas 
  • Preheat oven to 425°F. Prepare a baking sheet with aluminum foil.
  • In a bowl, mix together all Marinade ingredients. Set to side. 
  • Heat 1 tablespoon Olive Oil over medium heat in a skillet. Add Onion and a pinch of Salt and sauté for 5 minutes. 
  • Add Jackfruit to skillet with Water. Cover and steam for 10 minutes. 
  • Use a masher to gently mash the Jackfruit until desired texture. 
  • Add the Marinade to the skillet. Completely coat the Jackfruit. Simmer together for 5 minutes. 
  • Add Orange Juice and Smoked Salt to the skillet. Mix together and simmer for 5 minutes. 
  • Add Jackfruit mixture to the prepared sheet pan. Spread out into a flat single layer. Bake for 10 minutes. 
  • Assembly 
  • Serve Jackfruit Carnitas in warm Flour Tortillas with Dragon Fruit Salsa
