Dragon Fruit Salsa
In a medium bowl, mix all ingredients together. Let chill in the refrigerator until ready to use.
Jackfruit Carnitas
Preheat oven to 425°F. Prepare a baking sheet with aluminum foil.
In a bowl, mix together all Marinade ingredients. Set to side.
Heat 1 tablespoon Olive Oil over medium heat in a skillet. Add Onion and a pinch of Salt and sauté for 5 minutes.
Add Jackfruit to skillet with Water. Cover and steam for 10 minutes.
Use a masher to gently mash the Jackfruit until desired texture.
Add the Marinade to the skillet. Completely coat the Jackfruit. Simmer together for 5 minutes.
Add Orange Juice and Smoked Salt to the skillet. Mix together and simmer for 5 minutes.
Add Jackfruit mixture to the prepared sheet pan. Spread out into a flat single layer. Bake for 10 minutes.

Serve Jackfruit Carnitas in warm Flour Tortillas with Dragon Fruit Salsa
