Ingredients

For the crostini:

  • 1 French baguette cut into ½-inch slices
  • ½ tablespoon olive oil

For the whipped ricotta:

  • 1 cup whole milk ricotta
  • 1 tablespoon good quality extra virgin olive oil plus more for serving
  • ½ teaspoon honey
  • 1 ½ tablespoons fresh herbs such as basil, mint, thyme, oregano, or chives, finely chopped
  • 1 small clove garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Toast the bread: Preheat oven to 350°F. Arrange the baguette slices on a large baking sheet in a single layer. Brush lightly with olive oil and bake for 8-10 minutes until golden and crisp.
  • Make the whipped ricotta: In a mixing bowl, combine ricotta, olive oil, honey, fresh herbs, garlic, salt, and black pepper. Use a hand mixer on medium speed to beat until smooth and creamy, about 1 minute. Alternatively, blend in a food processor until light and fluffy.
  • Assemble the crostini: Spread a generous spoonful of whipped ricotta onto each toasted bread slice. Drizzle with extra olive oil and garnish with more fresh herbs if desired.

Notes

Customization: Swap toppings based on preference. Try fresh fruit, grilled vegetables, olives, or a drizzle of honey for added flavor.
Make ahead: Prepare the whipped ricotta 1-2 days in advance and store in an airtight container in the fridge. Let it sit at room temperature for 20 minutes before serving.
