Sicilian White Bean Mascarpone Dip

If you haven't yet tried using white beans as a spread or a dip, then this is the recipe you need to try. Once pureed, the beans are so smooth and creamy. I mixed them with mascarpone cheese for an extra creaminess. Then I added some lemon juice and zest for freshness. Serve this dip with pita chips or on a sandwich! I know you're going to love it! Ingredients

  • 15 oz Can Cannellini Beans drained and rinsed
  • 8 oz Mascarpone Cheese at room temperature
  • 1 teaspoon Kosher Salt
  • 1 tablespoon Grated Lemon Zest
  • 2 tablespoon Freshly Squeezed Lemon Juice
  • 1 tablespoon Olive Oil

Instructions

  • In the bowl of a food processor, combine the Beans, Mascarpone, Salt, and Lemon Zest. Process for 30 seconds, until pureed. With the machine running, add the Lemon Juice and Olive Oil, and continue to process until smooth, about another 30 seconds.
  • Serve immediately with pita chips or refrigerate for up to 4 days.
