Ingredients

  • 2 sheets of frozen puff pastry thawed overnight in the refrigerator
  • 8 ounces Brie cheese
  • 1 cup cranberry sauce jelly, or jam
  • 1 teaspoon flaky sea salt
  • 4 springs fresh rosemary cut into 6 pieces

Instructions

  • Place the Brie in the freezer for about 15 minutes to firm up, and generously coat your mini muffin pans with nonstick spray.
  • Roll the puff pastry into a rectangle, then cut it into squares.
  • Press the squares into each muffin cup. Use a fork to prick the bottom of the puff pastry in a couple of places.
  • Dice the Brie and add one piece to each muffin cup.
  • Top the Brie with the cranberry sauce and sprinkle some flaky sea salt over each.
  • Place the muffin pans on top of baking sheets to catch any drips.
  • Bake the Brie bites for 18 to 20 minutes at 375 degrees F (190 degrees C), until puffed and golden.
  • Let the bites cool in the pans for a few minutes.
  • Transfer the bites to a serving plate, and garnish each with a piece of fresh rosemary.
  • Serve the Cranberry Brie Appetizers hot or at room temperature, and enjoy with a glass of Libby Sparkling Wine Red Blend.

Notes

  1. Thaw puff pastry in the refrigerator overnight for best results.

  4. Prick the bottom of puff pastry with a fork to avoid excessive puffing.
  5. Experiment with different cheeses and fruit preserves for flavor variations.
  6. Bake until golden and puffed, adjusting time if needed.
  7. Garnish with fresh rosemary or other herbs for an elegant touch.
  8. Serve hot or at room temperature for optimal enjoyment.
  9. Pair with Pinot Noir or Brut Rosé for a delightful wine pairing.
  10. Customize toppings with nuts, caramelized onions, or honey drizzle.
