Prep the dates: Slice each Medjool date lengthwise and remove the pit, leaving two neat halves.
Caramelize: Heat the butter (or oil) in a skillet over medium heat. Place the dates cut-side down and cook 1–2 minutes until glossy, sticky, and darkened slightly (like soft caramel). Be careful to not burn the dates, a minute should really do the job.
Assemble: Quickly press each warm date half onto an apple wedge so it sticks.
Finish: Sprinkle with flaky sea salt and any optional toppings. Serve right away for gooey bites, or let cool for chewier, portable snacks.
