Meatballs

  • Preheat Oven: Set your oven to 400°F. Line a baking sheet with foil or coat it with nonstick cooking spray.
  • Sauté Vegetables: Heat olive oil in a small skillet over medium heat. Add diced onion and minced garlic. Sauté for 5-7 minutes, or until onions are translucent.
  • Prepare Stuffing Mix: In a small bowl, combine the stuffing mix with chicken broth. Let it sit for 5 minutes to rehydrate. Lightly mash with a fork to break up any large chunks.
  • Mix Ingredients: In a large bowl, combine the sautéed onion and garlic with the stuffing mixture, ground turkey, beaten egg, salt, poultry seasoning, and parsley (if using). Gently mix until just combined—avoid overmixing.
  • Form Meatballs: Shape the mixture into 20 meatballs, each about 3 tablespoons in size. Place them on the prepared baking sheet, spacing them 1-2 inches apart.
  • Bake: Cook for 14-16 minutes, or until the internal temperature reaches 165°F. For extra browning, you can broil the meatballs for an additional 2-3 minutes.

Herbed Gravy
