Ingredients

  • 2 ears of corn shucked
  • ½ cup small-diced red onion 1 small onion
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon Mediterranean spice blend ½ teaspoon dried oregano, ¼ teaspoon dried thyme, ¼ teaspoon dried basil
  • ¼ cup julienned fresh basil leaves
  • ¼ cup crumbled feta cheese

Instructions

  • In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone.
  • Drain and immerse the corn in ice water to stop the cooking and set the color. Once cooled, cut the kernels off the cob, cutting close to the cob.
  • In a large bowl, combine the corn kernels, red onions, balsamic vinegar, olive oil, salt, black pepper, and the Mediterranean spice blend. Toss everything together until well combined.
  • Gently toss in the fresh basil and crumbled feta cheese just before serving.
  • Taste for seasonings and adjust salt and pepper if needed.
