Simple Turkey Bolognese with Creamy Polenta
I love a good "cook all Sunday" kinda sauce but sometimes you need a quick dinner that's just as good that everyone will love. Enter this bolognese. I use ground turkey in this recipe to keep it light and healthy, but feel free to use your favorite ground meat (or alternative.) My favorite part of this sauce are the hidden veggies. You only need to prep and cook one pot and you get your protein and veggies! As a base I used creamy polenta (which if you've never used is so easy to make and so darn good!) I hope this recipe becomes a regular dish at your dinner table like it is at mine!

Ingredients
- ¼ Cup Olive Oil
- 1 Medium Onion chopped
- 2 Garlic Cloves minced
- 1 Celery Stalk diced
- 1 Carrot diced
- 1 Lb Ground Meat Turkey, Chicken, Beef, Alternative
- 1 28 oz Can Crushed Tomatoes
- ¼ Cup Flat-Leaf Italian Parsley chopped
- 8 Basil Leaves chopped
- Salt and Pepper
- ¼ Cup Parmesan
- 18 oz Roll of Polenta
- ½ Cup Chicken Stock plus more to get the Polenta creamy
Instructions
- In a large skillet heat the Olive Oil. When almost smoking, add the Onion and Garlic and sauté over medium heat until the Onions become very soft, about 8 minutes. Add the Celery and Carrot and sauté for 5 minutes. Raise heat to high and add the Ground Beef. Saute, stirring frequently and breaking up any large lumps and cook until meat is no longer pink, about 10 minutes. Add the Tomatoes, Parsley and Basil and cook over medium low heat until the sauce thickens. Season with Salt and Pepper. This will take approximately ½ hour. Finish bolognese with Pecorino Romano.
