These easy and delicious one pan marinara stuffed bell peppers are perfect for a quick dinner or for your weekly lunch meal prep! These tender bell peppers are stuffed with fresh vegetables, herbs, and spices that are mixed with hearty ground turkey. Pop them in the oven and in under an hour you will have a fresh and flavorful meal!

THE INGREDIENTS
Olive Oil - For this dish you don't need to use your highest quality olive oil. Only a little is needed to really bring out the flavor of the peppers
Shallot - If you don't have a shallot, you can also use ยผ of a yellow onion. Grated is key though to make sure it gets well incorporated into the filling.
Parsley - The fresh parsley adds such fresh and earthy flavor! You can half the amount in the recipe if you're not a fan, or eliminate it all together.
Egg - Just one will do to help the mixture bind together
Ketchup (or Tomato Paste) - Another miss on my grocery list (well my husband's miss. He does the shopping.) I used what I had, so ketchup it is! I recommend using tomato paste for a fresher, cleaner recipe.
Garlic - Measure with your heart
Salt - I used Kosher Salt for this dish
Parmesan - freshly grated - always.
Bread Crumbs - I used plain bread crumbs but you can also use seasoned ones for extra flavor.
Ground Turkey - Substitue out ground turkey for any ground meat or meat alternative of your preference.
Bell Peppers - I used orange, but yellow or red are great too. Green aren't my favorite, but if it's what you have - use it!
Store Bought Marinara Sauce - If you make your own marinara (it's really easy if you haven't tried!) you can use that too!
INSTRUCTIONS
Preheat the oven to 400ยฐF.
Lightly drizzle the Olive Oil into a 9"x9" baking dish.
In a large bowl combine the Onion, Parsley, Egg, Ketchup, Garlic, and Salt. Then stir in the Parmesan and Breadcrumbs.
Add the Ground Turkey to the bowl, and with your hands, mix until fully incorporated.
Fill the Bell Pepper halves with the Turkey mixture, dividing equally and mounding slightly. Arrange the stuffed Peppers in the baking dish. Pour the Marinara sauce over the stuffed Peppers.
Bake uncovered until the Peppers are tender and beginning to brown and a thermometer inserted into the filling registers 165ยฐF, about 45 minutes. Transfer the stuffed Peppers to a platter and serve.
TIPS
Brighten up a party and use mini peppers instead of large bell peppers! How much fun would these be to eat with your hands?!
Everyone has their favorite way to prep a bell pepper. For this recipe I cut them down the center and pulled out the seeds and parts that I didn't want to eat. You'll be filling them, so no one will see how pretty you prepared them.
Add more parmesan cheese, or even add Mozzarella cheese, to the top to make them ooey-gooey and melty!
