Irish Mashed Potatoes & Cabbage (Colcannon)
This dish is the definition of comfort food. I grew up eating buttered cabbage and noodles, but buttered cabbage and mashed potatoes is even better! It's everything you love about classic mashed potatoes but with sweet and buttery cabbage. This is a great dish for St. Patrick's Day or any night of the year (It's also an easy way to sneak in some veggies!)ย

Ingredients
- 2 Lbs Potatoes peeled, cubed
- 1 Medium Cabbage sliced thin
- ยฝ Cup Butter divided
- ยฝ Cup Heavy Cream warmed
- 1 teaspoon Salt
- ยฝ Cup Fresh Parsley roughly chopped
Instructions
- In a large pan, over medium heat, melt ยผ Cup Butter. Add in sliced Cabbage and Salt. Cook for 20 minutes, stirring often (it's ok if the cabbage browns a bit.)
- Meanwhile, in a separate pot, boil water over high heat. Once boiling add Potatoes and cook until fork tender. Drain Potatoes and set to side.ย
- Once Cabbage is tender, add in cooked Potatoes, Cream, and remaining Butter. Use a masher and mash until desired consistency (I like mine more chunky.)ย
- Remove the pan from the heat and stir in Parsley.
- Garnish with extra Parsley and a pat of Butter.ย
