Ingredients
Full ingredients with measurements listed below
Dry Ingredients
- Flour
- White Sugar - You can also use brown sugar in a pinch!
- Salt
- Baking Powder
Wet Ingredients
- Vegetable Oil
- Egg
- Milk
- Blueberries - You can use fresh blueberries or frozen berries that have been thawed.
Sugar Topping
- White Sugar
- Flour
- Butter
- Ground Cinnamon
To make combine all ingredients in a bowl. I recommend using a pastry cutter, but a fork will work just fine.
How to Make these Blueberry Muffins with Sugar Topping
Full step by step instruction listed below
- Preheat oven to 400 degrees F
- Line muffin tin with muffin liners
- Combine the dry ingredients in a bowl
- In a seperate bowl, combine the wet ingredients.
- Add the wet ingredients to the dry ingredents and mix until just incorporate. Do not over mix the batter.
- Once wet & dry are incorporated, fold in the blueberries.
- Fill muffin cups right to the top, and sprinkle with streusel topping mixture.
- Bake for 20 to 25 minutes until done.

Can I make my own muffin liners with parchment paper?
Using a ruler and a roll of parchment paper, trace and cut out a dozen 6-inch (15-cm) squares. Working with 1 square at a time, place it on your work surface, position the bottom of a drinking glass on top, and fold the edges of the square up around the glass. Then place the paper cup in the muffin tin.
For pre-made paper liners, I prefer these.

How to Store these muffins?
To store blueberry muffins, line an airtight container with paper towels, then arrange the muffins in the container in a single layer. Throw in a few saltines or a slice of bread to absorb the excess moisture. Close the lid and store at room temperature for up to four days.

Yes, blueberry muffins freeze well. Wrap them individually in storage wrap, then place in a freezer-safe container. Freeze for up to two months. Thaw at room temperature or gently in the microwave.

Tips
For best results:
- use room temperature ingredients.
- fill muffin pans to almost the top of the tin.
- let the muffins sit in the pan for 5 minutes after baking before removing them.
- allow the muffins to cool completely on a wire rack.
- Don't over mix the batter

Ingredients
- 1 ยฝ cups all-purpose flour
- ยพ cup white sugar
- ยฝ teaspoon salt
- 2 teaspoons baking powder
- โ cup vegetable oil
- 1 egg
- โ cup milk
- 1 cup fresh blueberries
Topping
- ยฝ cup white sugar
- โ cup all-purpose flour
- ยผ cup butter cubed
- 1 ยฝ teaspoons ground cinnamon
Instructions
- Preheat oven to 400 degrees F
- Line muffin tin with muffin liners
- Combine flour, sugar, salt and baking powder.
- In a small bowl combine the vegetable oil, the egg and almond milk. Fold the wet mixture into the dry mixture. Once incorporated, fold in the blueberries.
- Fill muffin cups right to the top, and sprinkle with streusel topping mixture.
- To Make Streusel Topping: Mix together the streusel ingredients and sprinkle over muffins before baking.
- Bake for 20 to 25 minutes until done.
